This recipe is super simple, gluten-free, dairy-free, and DELICIOUS :)
2 medium-sized Raw Beets, shredded
1 small handful of Walnuts, roughly chopped
1 small handful of Dill or Parsley (your choice), roughly chopped
1-2 cloves of Garlic, minced
Juice of 1/2 - 1 Lemon
Extra Virgin Olive Oil, to taste
Sea Salt, to taste
Black Pepper, to taste (optional)
Combine all of the ingredients in a bowl. Mix with hand.
For a heartier option that includes dairy, top individual plates with crumbled goat's cheese.
