This recipe is delicious, healthy, and super-satisfying! It can be thrown together in less than 5 minutes with household staples, and can easily be made gluten-free and vegan.
1 large Carrot (raw), peeled and grated
1 small handful of Walnuts, roughly chopped
1 tbsp. Mayonnaise, or more to taste (I use vegan mayo most of the time, but regular works too)
A pinch of Salt + Black Pepper, to taste (optional)
Combine ingredients together in a bowl and mix.
Enjoy on toast (right now I am loving Food for Life's sprouted grain bread, which is free of gluten and wheat and can be found in the frozen isle at Stop and Shop), by itself as a side, or atop a bed of greens.
