The What & Why Behind My Fav Breakfast Right Now

 Celery stalks, sunflower seed butter, raw cacao– oh my! 

 

Juicy, crispy, creamy, crunchy– the textures and flavors of this trio pair together beautifully! Most importantly, it sustains me well until lunch, without making me feel bloated or weighed down.

 

Up until recently, I hadn’t eaten breakfast regularly in years. I used to. But, it gave me headaches and major brain fog. It also made me feel tired, bloated, anxious, and starving– no– HANGRY for the rest of the day. 

What I experienced in my body was very different from what I was told about breakfast. Adults, educators, and the media said, “Breakfast is the most important meal of the day. Eat a good breakfast to start your day off right.” Well, I was eating the same “complete” breakfast that I saw in the commercials for cereals and frozen waffles, and it was NOT making me strong like Tony the Tiger. 

So instead of feeling terrible and crazy 24/7, I declared that I was no longer a breakfast person. I decided that I'd rather be a little hungry than have to drag myself through the day.

Fast forward to now and I understand why I felt so terrible. Simple and refined carbohydrates, processed and packaged foods, poor quality, artificial ingredients– it wasn’t breakfast that was making me sick, it was what was (and wasn’t) on my plate that was doing the damage.

 

For me, an energizing breakfast...

  • starts with 32 oz. of clean water.

  • is the right portion size (size of my cupped hands).

  • emphasizes healthy fat.

  • includes protein.

  • includes complex carbohydrates from vegetables (fiber!).

  • is comprised of whole foods.

  • avoids simple carbohydrates (white flour, dairy, sugar, honey, fruit, etc.).

If you struggle with breakfast, try following the above guidelines and notice how you feel. Remember that we are all individuals, and what works for one person may not serve the next. Experiment, listen to your body, and step into your best self!

 

To make my fav energizing breakfast:

  • Wash 2 celery stalks and cut in half.

  • Fill stalks with sunflower seed butter, or your favorite nut or seed butter. Read labels to make sure that ingredients are minimal without added sugar or oils.

  • Sprinkle with raw cacao nibs.

  • Enjoy!
